A succulent but healthy meal that brings out Mexican heat with the lightness of four ravioli.

Tomato Basil Burrata Pasta

Ingredients

  • 680 g plum tomatoes, quartered
  • 2 cloves garlic, chopped
  • 12 ml olive oil
  • 25 ml red wine vinegar
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 10 g chopped basil
  • 30 g grated parmesan cheese
  • 375 g burrata cheese

Instructions

  1. In a large bowl, combine tomatoes, garlic, olive oil, vinegar, salt, and pepper. Stir occasionally for 1 hour.
  2. Boil pasta and cook as per instructions. Drain pasta and add to bowl.
  3. Stir in basil and parmesan. Taste and adjust seasoning.
  4. Divide pasta among bowls, topping with burrata.
  5. Drizzle with olive oil and serve.
