A succulent but healthy meal that brings out Mexican heat with the lightness of four ravioli.

Ingredients
- 680 g plum tomatoes, quartered
- 2 cloves garlic, chopped
- 12 ml olive oil
- 25 ml red wine vinegar
- 2 tsp. salt
- 1/2 tsp. pepper
- 10 g chopped basil
- 30 g grated parmesan cheese
- 375 g burrata cheese
Instructions
- In a large bowl, combine tomatoes, garlic, olive oil, vinegar, salt, and pepper. Stir occasionally for 1 hour.
- Boil pasta and cook as per instructions. Drain pasta and add to bowl.
- Stir in basil and parmesan. Taste and adjust seasoning.
- Divide pasta among bowls, topping with burrata.
- Drizzle with olive oil and serve.
